Exploring Variation Within the Familiar

To explore balance in practice, we’ve taken two of many possible development directions, using tiramisu as a familiar reference point to demonstrate how flavour profiles can be adapted to meet different application and customer requirements.

  • Cozy, spiced caramel biscuit tiramisu
    This expression leans into warmth and comfort, layering caramelised biscuit richness with gentle aromatic spices. The result is a familiar, rounded, and indulgent profile, with emphasis on depth and mouthfeel.
  • Fruity, refreshing limoncello-style tiramisu
    In contrast, this direction explores brightness and lift. Zesty lemon notes bring freshness and vibrancy to the creamy base, shifting the overall perception while retaining the structural balance that characterises tiramisu.

Two distinct moods. Two different profile expressions. Both built on the same classic foundation.

Exercises like this allow us to examine how balance, intensity, and structure can be reinterpreted to suit different concepts, applications, and positioning needs, without losing control of performance.

Development as a Technical, Collaborative Process

Effective flavour development is iterative and collaborative, evolving as a product moves from concept toward commercial reality.
